Inspired by the legendary Hôtel de Crillon in Paris, this Tahitian vanilla dessert is a study in texture and technique. The dish is meticulously layered with pillowy basmati espuma, rich macadamia nut crémeux, and salted caramel, all punctuated by bites of seasonal fruit.

The experience begins before the first bite. The pudding is crowned with a delicate, intricate lattice wafer.
